Lemon and grapefruit up front, with white peach, red apple and pear behind. Forty-eight months on the lees brings brioche and toast. Fine mousse, crisp acidity and a long, saline finish. 24 months on the lees followed by time on cork to mature and come into it's own. Extra Brut, 3.5 g/L. Free SO2 1mg/L. 12% ABV.
